Today I’m in the business of convincing you that it is 100% worth the low key time and effort to make your own Thai yellow curry paste.
The bones of this recipe are from the @saveurmag New Classics cookbook (one of my all time favorites). Over the years I’ve made my own interpretation of this yellow curry paste from that recipe, mostly omitting the traditional galangal and shrimp paste because they aren’t ingredients I normally keep stocked.
I’ll show you how the paste actually makes it super quick and easy to pull together a Thai yellow curry in the next video! (The paste just needed it’s own video because it’s really the star here.)
This yellow curry paste batch is enough to get you 3 batches of curry. Freezes perfectly.
