Summer on a plate: sea scallop crudo with an assortment of sungold and cherry tomatoes, scallion + raw sweet corn fresh from the farmer’s market. Squeeze on some lemon juice, add a few pinches of sea salt, and drizzle olive oil all over.
Be sure to buy big ‘dry’ scallops as ‘wet’ ones are steeped in a chemical preservative–which is no fun if you’re looking for a clean-tasting crudo dish. Sea scallops are quite thick, so slice them crosswise if you’d like. And since the scallops are consumed raw, make sure your source is reliable!
