Lemon rice with mozzarella, tomatoes and EVOO and fried egg.

Picture shows only rice but I mixed white rice with cauli rice to add in some veggies and cut down on carbs.

Ingredients:
Oil
Mustard seeds
Red chillies
Lemon juice
Garlic
Salt
Turmeric powder
2 cups of white rice
1 bag of cauliflower rice

Lemon Rice recipe:

Heat up some oil and throw in some mustard seeds, once the mustard seeds start splattering add two red chillies for spice, then add 0.25 tbsp of turmeric and then add some sliced garlic. Saute until the garlic turns holders brown, then add 4 tbsp of lemon juice. Adjust the quantity of lemon juice based on your preference. Add the turmeric powder and cook for 5 minutes.

Mix 2 cups of cooked white rice with 1 bag of cauliflower rice.

Now add the lemon mixture to the rice mixture and mix it well together. Add 2 teaspoon of salt. Adjust the amount of salt accordingly to your preference.
