Honestly pretty disturbed at the poll results from Stories. 😂 A sizable group of you are not putting classic, smooth, perfectly melting American cheese on your grilled cheese?! What? Why? You have to be lying. (swipe for the breakdown)
I mean, good news is that this kimchi grilled cheese will be amazing regardless (have tried it with multiple cheeses and can confirm). Because what makes it delicious is less the type of cheese and more the pan-fry of the kimchi.
I tried this method after reading this comment on a New York Times recipe that recommends pan frying the kimchi with spam (bacon here) and brown sugar before putting it on the sandwich. HOLY SMOKES. So, so good. Makes *all* the difference. It dries out the kimchi and makes it almost caramelized and jammy.
