Halloumi cheese briefly seared in a little oil until golden and squeaky-soft, then paired with a farmer’s market haul of Diva cucumbers, speckled tomatoes, and juicy peaches. Drizzled on some extra virgin olive oil, and topped off with scallions + toasted nigella seeds for texture and that mild onion flavor.

The halloumi is pleasantly salty enough that no extra seasoning is needed, but a light sprinkling of sea salt–though not essential–will complement the already super flavorful in-season produce quite well.
