Been too lazy to post during the holidays, but happy new year to you with this easy creamy-tangy smoked salmon pasta. All you need to do is:

1. Cook + drain some pasta. Save a bit of the pasta cooking water.
2. Return pasta to pot, add in a splash of pasta water.
3. Stir in a generous blob of crème fraîche over low heat. I like the one from @vermontcreamery.
4. Pop open and toss in a tin or two of @fishwife Norwegian smoked salmon. Include the smoky oil + liquid!
5. Stir gently until warmed through, then transfer to serving bowls
6. Salt + pepper to taste. Lemon is essential. Scallions + pickled peppers would also be great but totally optional if you’re too tired and overworked to slice anything.
